Everything is homemade, using ingredients from local, often organic producers, with many items sourced directly from the restaurant’s own garden. From bread to sauces and fermentations – every detail is crafted with respect for nature and flavour.
The chef also shares his passion through monthly cooking workshops, on topics such as lacto-fermentation, vegetarian street food, or illusion-based culinary techniques.
